A quick and easy comfort food, readily confused with American pancake-style flapjacks.
Ingredients
- 125 g butter
- 4 tbs golden syrup
- 1/3 cup sugar
- 225 g rolled oats
- 1/4 tsp salt
Method

Step 1Melt butter and golden syrup and add other ingredients.

Step 2Mix well and press into an oiled 20 cm shallow tin.

Step 3Preheat oven to 150C and bake 30-40 minutes. Lower temperature makes it moist and chewy while baking a few minutes longer will make a firm, crisper product.

Step 4Remove and stand 5 minutes.

Step 5Carefully cut into bars.

Step 6Leave until lukewarm before removing. Flapjack is fragile while hot and will be too firm to remove when cold.
Recipe Notes
Substitute natural or toasted muesli for all of the rolled oats. Up to a quarter of the rolled oats can be substituted with desiccated coconut. Butter can be reduced to 80 g and 2 tablespoons peanut butter added. Add up to 60 g dried fruits, nuts, seeds or mini choc-chips.
