This easy to make dinner is a fast and tasty salmon pasta without cream dish. The tomato sauce, fresh parsley and lemon juice adds brightness to the dish, balancing the rich salmon.
Ingredients
- 4 salmon fillet
- 800 g canned chopped tomato
- 1 brown onion medium roughly chopped
- 2 garlic clove thinly sliced
- 1 tsp lemon juice
- 1/2 cup fresh curly parsley chopped
- 500 g pasta
Method

Step 1Cook pasta as per packet instructions. Drain and return to pot.

Step 2Meanwhile, heat oil in a large frypan and add onion and garlic, cooking until turning transparent.

Step 3Add tomatoes and bring to the boil.

Step 4Place salmon in tomato sauce and simmer gently.

Step 5Pour tomato and salmon sauce over pasta and stir through.

Step 6Add lemon juice and stir through the parsley.

Step 7Serve with Parmesan cheese, if desired.
Recipe Notes
You may be able to get salmon off-cuts from your local fishmonger. They are much cheaper than buying salmon steaks. I use 500 g pieces of salmon.
