Ingredients

  • 500 g Tassal salmon fillet skin off
  • 3 orange sliced
  • 2 fennel bulb sliced
  • 3 tbs olive oil
  • 1 tbs fresh dill
  • 1 pinch sea salt grinder salt *to taste

Method

  • Step 1
    Pre-heat oven to 200°C. Prepare a baking tray.
  • Step 2
    Place sliced oranges and fennel in the middle of foil.
  • Step 3
    Place salmon on top and drizzle with olive oil and season with sea salt and add some dill.
  • Step 4
    Create a dome to seal in steam and juices, leaving a small space above the fish.
  • Step 5
    Bake for 25 mins then let it sit for 5 minutes before tearing open the foil. Garnish with some more fresh dill.
