This quick and easy dessert looks indulgent with a knock-out rum and raisin flavour that is a big hit with all ages. Hubby loves his rum and raisin.
Ingredients
- 150 g rum and raisin chocolate
- 30 g butter
- 200 ml thickened cream
- 3 eggs separated
- 200 ml thickened cream whipped
- 18 fresh raspberries
- 20 g milk chocolate grated
Method

Step 1Chop rum and raisin chocolate bar into small pieces and place in a microwave-safe bowl with butter. Melt on medium (50% power) for 15 seconds. Stir and repeat until smooth. Remove and cool.

Step 2Whip thickened cream with electric beaters in a small bowl until thick. Then add 3 egg yolks, one at a time, and beat on medium speed. Stir through the cooled chocolate mixture.

Step 3In a separate bowl, whip 3 egg whites until peaks form, then gently fold into the chocolate mixture. Spoon into small serving glasses and refrigerate until firm (2-3 hours).

Step 4To serve, top with whipped cream and decorate with raspberries and grated chocolate.
