Rum and Raisin Chocolate Mousse

Ingredients

  • 150 g rum and raisin chocolate
  • 30 g butter
  • 200 ml thickened cream
  • 3 eggs separated
  • 200 ml thickened cream whipped
  • 18 fresh raspberries
  • 20 g milk chocolate grated

Method

  • Step 1
    Chop rum and raisin chocolate bar into small pieces and place in a microwave-safe bowl with butter. Melt on medium (50% power) for 15 seconds. Stir and repeat until smooth. Remove and cool.
  • Step 2
    Whip thickened cream with electric beaters in a small bowl until thick. Then add 3 egg yolks, one at a time, and beat on medium speed. Stir through the cooled chocolate mixture.
  • Step 3
    In a separate bowl, whip 3 egg whites until peaks form, then gently fold into the chocolate mixture. Spoon into small serving glasses and refrigerate until firm (2-3 hours).
  • Step 4
    To serve, top with whipped cream and decorate with raspberries and grated chocolate.

Recipe Notes
Allow mousse to chill for 2-3 hours.
