Kale is a superfood with lots of good nutrition, but a lot of people find the texture is hard to eat. Try this recipe now. It's yummy and tender, and it will change the way you think about kale.
Ingredients
- 1 bunch red kale discarded stalks leaves cut
- 300 g bacon rashers chopped
- 200 g frozen peas
- 250 g macaroni
- 6 garlic cloves
- 650 ml chicken stock (liquid)
- 3 tbs olive oil
- 2 tbs white wine
- 1 pinch salt and pepper *to taste

Step 1Heat the oil in a big saucepan with medium heat and cook the bacon until fat has rendered. Add garlic and cook for 3 minutes.

Step 2Add red kale and white wine, cook until kale starts to reduce. Pour chicken stock in and then add peas, cover with lid, reduce the heat, then simmer for 25 minutes, or until the kale turns tender and has just a little liquid left. Stir occasionally.

Step 3Meanwhile, cook the macaroni in a big saucepan of boiling water with a little salt and oil, stir occasionally. Once it's cooked, drain and stir in with kale mix.

Step 4Add salt and pepper to taste.
Recipe Notes
When rendering bacon, cover with lid to avoid the spitting oil.
