Ingredients

  • 750 g sausage meat
  • 1 onion diced
  • 1 carrot finely grated
  • 1 zucchini finely grated
  • 2 tsp garlic crushed
  • 1 cup stuffing mix
  • 4 sheets puff pastry
  • 1 egg beaten
  • 1 tbs milk
  • 1 tbs poppy seeds *to taste

Method

  • Step 1
    Heat oven to 220 degrees Celsius.
  • Step 2
    Line two oven trays with baking paper.
  • Step 3
    Thaw pastry.
  • Step 4
    Mix the sausage, onion, carrot, zucchini, garlic and stuffing mix together in a bowl.

    On a cutting board cut a piece of puff pastry in half.
  • Step 6
    On one side add 1/2 cup of the sausage mix making it into a long sausage.
  • Step 7
    Using the egg and milk make an egg wash and brush one side.
  • Step 8
    Roll up and then slice into 6 small sausage rolls. Place on a try so that there is about 1cm between them.
  • Step 9
    Continue with the rest, filling up all trays.
  • Step 10
    Egg wash all sausage rolls and you may sprinkle with poppy or sesame seeds or leave as is.
  • Step 11
    Place trays in the fridge or freezer for 10-15mins to get the pastry cold again.
  • Step 12
    Cook in oven on 220 degrees for 15 minutes. Check and if starting to brown reduce heat to 180 degrees and cook for a further 10 minutes. This may vary as different ovens have different heats.
  • Step 13
    Once cooked serve immediately or allow to cool on wire racks.
Recipe Notes

If using bread crumbs you may like to add some mixed herbs. Sausage meat from supermarkets is too fatty.
