Ingredients

  • 125 g soft butter
  • 1 cup raw sugar
  • 3 eggs
  • 1 1/2 cups pumpkin mashed
  • 1 cup desiccated coconut
  • 1 1/2 cups self-raising flour
  • 1/2 cup sultanas
  • 1 tbs orange juice
  • 1 tsp orange zested

Method

  • Step 1
    Cream butter and sugar. Add eggs, one at a time.
  • Step 2
    Add mashed pumpkin and coconut, mix well.
  • Step 3
    Fold in the flour.

    Stir in sultanas, orange juice and zest.
  • Step 5
    Place in a greased 14 cm x 24 cm loaf pan.
  • Step 6
    Bake at 180C for 1-1¼ hours.
