Ingredients

  • 3 tbs white wine vinegar
  • 2 tbs caster sugar
  • 2 tbs fresh ginger grated
  • 1 clove garlic crushed
  • 1/2 tsp ground cumin
  • 1/4 cup coriander chopped
  • 1/4 cup mint chopped
  • 1 red capsicum diced
  • 1 red onion diced small
  • 1 red chilli finely chopped small
  • 2 canned peaches diced

Method

  • Step 1
    Combine the vinegar, ginger, sugar, garlic, cumin, coriander and mint.
  • Step 2
    Combine the capsicum, onion, chilli, and peaches in a bowl.
  • Step 3
    Gently stir through the vinegar and herb mixture and serve immediately.

  • 1 bowl
Recipe Notes
Finely dice red onion and dice canned peaches or 3 fresh.
