Plenty of bite, and a spark of tang. Ideal to accompany chicken, seafood and red meat.
Ingredients
- 3 tbs white wine vinegar
- 2 tbs caster sugar
- 2 tbs fresh ginger grated
- 1 clove garlic crushed
- 1/2 tsp ground cumin
- 1/4 cup coriander chopped
- 1/4 cup mint chopped
- 1 red capsicum diced
- 1 red onion diced small
- 1 red chilli finely chopped small
- 2 canned peaches diced
Method

Step 1Combine the vinegar, ginger, sugar, garlic, cumin, coriander and mint.

Step 2Combine the capsicum, onion, chilli, and peaches in a bowl.

Step 3Gently stir through the vinegar and herb mixture and serve immediately.
