Ingredients

  • 1/2 cup gluten-free plain flour
  • 1/2 tsp gluten-free baking powder
  • 180g gluten-free icing sugar
  • 100g almond meal
  • 1 orange zested
  • 100g butter melted
  • 3 eggs lightly beaten
  • 100g poppy seeds
  • 2 tbs orange juice

Method

  • Step 1
    Preheat fan-forced oven to 180C. Spray a 12-hole friand tin with canola spray.
  • Step 2
    Sift plain flour, baking powder and icing sugar into a large mixing bowl.
  • Step 3
    Stir in almond meal, orange zest and poppy seeds.
  • Step 4
    Lightly beat eggs with a fork and stir into dry ingredients, then stir in the melted butter and orange juice. Mix will be quite 'wet'.

    Spoon into the friand tin, filling two thirds full.
  • Step 6
    Bake for 15-20 minutes, checking after 15 minutes, until a skewer inserted into the centre comes out clean.
  • Step 7
    Cool in the tin for 5 minutes before carefully loosening the sides of the friands with a flat blade and lift out to cool on a rack.
