These sweet friands are gluten-free so no one has to miss out.
Ingredients
- 1/2 cup gluten-free plain flour
- 1/2 tsp gluten-free baking powder
- 180g gluten-free icing sugar
- 100g almond meal
- 1 orange zested
- 100g butter melted
- 3 eggs lightly beaten
- 100g poppy seeds
- 2 tbs orange juice
Method

Step 1Preheat fan-forced oven to 180C. Spray a 12-hole friand tin with canola spray.

Step 2Sift plain flour, baking powder and icing sugar into a large mixing bowl.

Step 3Stir in almond meal, orange zest and poppy seeds.

Step 4Lightly beat eggs with a fork and stir into dry ingredients, then stir in the melted butter and orange juice. Mix will be quite 'wet'.

Step 5Spoon into the friand tin, filling two thirds full.

Step 6Bake for 15-20 minutes, checking after 15 minutes, until a skewer inserted into the centre comes out clean.

Step 7Cool in the tin for 5 minutes before carefully loosening the sides of the friands with a flat blade and lift out to cool on a rack.
