Ingredients

  • 8 slices bread day-old
  • 8 tbs strawberry jam
  • 5 eggs
  • 400 ml milk
  • 1/3 cup caster sugar
  • 1 tsp vanilla essence
  • 1/4 cup desiccated coconut
  • 1 tbs brown sugar

Method

  • Step 1
    Spread jam over bread and slice in half.
  • Step 2
    Arrange in a deep baking dish randomly.
  • Step 3
    Mix eggs, milk, caster sugar and vanilla essence together and pour over the bread.

    Sprinkle coconut and brown sugar over the top.
  • Step 5
    Bake in a moderate oven for 20 minutes.
  • Step 6
    Serve with thick cream or vanilla ice cream.
Recipe Notes

The bread will rise in the oven - this is normal and will go down as it cools.

Any jam will do, orange marmalade is nice also.

I often use toast bread or even stale croissants Bread doesn't have to be stale.
