Pizza is already easy to make, but this muffin pan version is even easier! Whip up a few - the kids will love them.
Ingredients
- 100g crusty garlic bread, cut into 2cm pieces
- 75g shaved salami, chopped
- 1/4 cup pitted kalamata olives, chopped
- 1/4 cup semi-dried tomatoes, chopped
- 1/4 cup chopped fresh basil leaves, plus extra small leaves to serve
- 3/4 cup grated pizza cheese
- 4 eggs
- 1 1/4 cups milk
Method

Step 1Preheat oven to 180C/160C fan-forced. Line a 12-hole, 1/3 cup-capacity muffin pan with paper cases (see note).

Step 2Divide half the bread among paper cases. Top with salami, olives, tomato, chopped basil and cheese, then remaining bread. Whisk eggs and milk together. Season with salt and pepper. Carefully divide egg mixture among paper cases. Stand for 5 minutes.

Step 3Bake for 20 to 25 minutes or until golden and set. Stand puffs in a pan for 2 minutes. Transfer to a serving board. Sprinkle with basil leaves. Serve.
Recipe Notes
We used café-style white paper cases. You could also use two strips of baking paper, lining each hole in a cross pattern
