Ingredients

  • 200 g red lentils
  • 500ml vegetable stock
  • 500 ml tomato juice
  • 400 g canned chopped tomato
  • 1 red onion chopped large
  • 2 carrot large thinly sliced
  • 2 celery stick finely chopped
  • 2 garlic clove crushed
  • 1 tbs canola oil

Method

  • Step 1
    Heat oil in a large saucepan and add the chopped onion. Cook until softened but not coloured.
  • Step 2
    Stir in the celery, garlic and carrots and cook for a further 5 minutes.
  • Step 3
    Add the juice, chopped tomatoes and stock to the pot and then pour in the dried lentils, stirring to combine.
  • Step 4
    Increase heat, bring to the boil, then reduce heat to low and simmer gently, covered, for approximately 30 minutes.
  • Step 5
    Allow to cool slightly, then blend the soup, adding a little water or stock if mixture is too thick.
Recipe Notes

I use V8 brand of vegetable juice.
