A heart warming and tasty soup, ideal for cold winter days.
Ingredients
- 200 g red lentils
- 500ml vegetable stock
- 500 ml tomato juice
- 400 g canned chopped tomato
- 1 red onion chopped large
- 2 carrot large thinly sliced
- 2 celery stick finely chopped
- 2 garlic clove crushed
- 1 tbs canola oil
Method

Step 1Heat oil in a large saucepan and add the chopped onion. Cook until softened but not coloured.

Step 2Stir in the celery, garlic and carrots and cook for a further 5 minutes.

Step 3Add the juice, chopped tomatoes and stock to the pot and then pour in the dried lentils, stirring to combine.

Step 4Increase heat, bring to the boil, then reduce heat to low and simmer gently, covered, for approximately 30 minutes.

Step 5Allow to cool slightly, then blend the soup, adding a little water or stock if mixture is too thick.
