A delicious, low fat, but quick and easy parmigiana. I make this recipe at least once a week and everyone loves it. Because you are cooking the chicken in liquid it keeps it nice and moist.
Ingredients
- 4 chicken breasts
- 300 ml chicken stock (liquid)
- 400 g canned diced tomatoes
- 2 chicken stock cube
- 1 tsp sweet chilli sauce *to taste
- 1 light mozzarella grated *to taste
- 1 tsp sugar
Method

Step 1Using a meat mallet pound chicken breast until flat.

Step 2Add a small amount of oil and garlic to a fry pan and brown chicken on both sides.

Step 3Pour in white wine or liquid chicken stock until chicken is just covered.

Step 4Simmer until chicken is cooked turning as required.

Step 5Spoon pan juices over each piece of chicken and top with grated mozzarella.

Step 6Place lid on fry pan until cheese melts.

Step 7In a separate saucepan add diced tomatoes, 2 chicken stock cubes, sugar and sweet chilli sauce to taste.

Step 8Simmer for 5 minutes.

Step 9Serve sauce over chicken.
Recipe Notes
You can use wine instead of the stock. Both work well but I find taste wise the wine gives it a nice subtle tang.
I use canned chopped tomatoes with basil and garlic.
