Low-Fat Chicken Parmigiana

A delicious, low fat, but quick and easy parmigiana. I make this recipe at least once a week and everyone loves it. Because you are cooking the chicken in liquid it keeps it nice and moist.

Ingredients

  • 4 chicken breasts
  • 300 ml chicken stock (liquid)
  • 400 g canned diced tomatoes
  • 2 chicken stock cube
  • 1 tsp sweet chilli sauce *to taste
  • 1 light mozzarella grated *to taste
  • 1 tsp sugar

Method

  • Step 1
    Using a meat mallet pound chicken breast until flat.
  • Step 2
    Add a small amount of oil and garlic to a fry pan and brown chicken on both sides.
  • Step 3
    Pour in white wine or liquid chicken stock until chicken is just covered.
  • Step 4
    Simmer until chicken is cooked turning as required.
  • Step 5
    Spoon pan juices over each piece of chicken and top with grated mozzarella.
  • Step 6
    Place lid on fry pan until cheese melts.
  • Step 7
    In a separate saucepan add diced tomatoes, 2 chicken stock cubes, sugar and sweet chilli sauce to taste.
  • Step 8
    Simmer for 5 minutes.
  • Step 9
    Serve sauce over chicken.
Recipe Notes

You can use wine instead of the stock. Both work well but I find taste wise the wine gives it a nice subtle tang.

I use canned chopped tomatoes with basil and garlic.
