Ingredients

  • 1 cup raw sugar
  • 2 1/2 cup self-raising flour
  • 1 tsp mixed spice
  • 2 tsp ground cinnamon
  • 4 egg
  • 1 cup vegetable oil
  • 500 g carrot finely grated
  • 1 cup walnuts
  • 3/4 cup golden syrup

Icing

  • 250 g cream cheese
  • 1/2 cup butter
  • 1 tsp vanilla essence
  • 1 tsp almond essence optional
  • 1 tsp ground cinnamon
  • 1 cup icing sugar
  • 1 tbs walnuts diced *to decorate

Method

  • Step 1
    Cake: Combine dry ingredients and mix well.
  • Step 2
    In a separate bowl, combine eggs, golden syrup and oil and blend well.
  • Step 3
    Hand mix dry ingredients, slowly adding the egg mix until smooth. Do not overwork.
  • Step 4
    Stir in the carrots and nuts, combine evenly.
  • Step 5
    Pour into a greased and baking paper lined 23 cm x 33 cm pan.
  • Step 6
    Bake at 170C for 45–55 minutes, or until a skewer inserted into the centre comes out clean.
  • Step 7
    Remove from pan and let cool on cooling rack.
  • Step 8
    Icing: Mix cream cheese, butter, cinnamon, vanilla and almond essence until creamy.
  • Step 9
    Add icing sugar gradually until desired consistency and sweetness is reached.
  • Step 10
    Spread over cooled cake. Sprinkle with finely chopped nuts if desired.
Recipe Notes
I prefer pecans or macadamias to walnuts as they aren't as bitter.
