Ingredients

  • 2 tbs peanut oil
  • 2 onion chopped
  • 1 garlic clove
  • 1 tsp chilli paste
  • 2 tsp palm sugar
  • 2 tbs white vinegar
  • 1/2 tsp galangal
  • 750 g peanut butter
  • 2 tbs kecap manis
  • 1 cup boiling water
  • 1 pinch salt and pepper

Method

  • Step 1
    Fry the onions and garlic in peanut oil until light golden brown.
  • Step 2
    Add the chilli paste, palm sugar, vinegar, laos and kecap manis.
  • Step 3
    Keep stirring and add peanut butter and as much boiling water as needed to make a thick sauce.
  • Step 4
    Add salt if desired.
Recipe Notes

For a very quick meal, have some cooked rice with chopped up cucumber and peanut sauce as a vegetarian option and add chicken for the additional extras. The sauce is very suitable for freezing in portions.
