The real peanut satay sauce.
Ingredients
- 2 tbs peanut oil
- 2 onion chopped
- 1 garlic clove
- 1 tsp chilli paste
- 2 tsp palm sugar
- 2 tbs white vinegar
- 1/2 tsp galangal
- 750 g peanut butter
- 2 tbs kecap manis
- 1 cup boiling water
- 1 pinch salt and pepper
Method

Step 1Fry the onions and garlic in peanut oil until light golden brown.

Step 2Add the chilli paste, palm sugar, vinegar, laos and kecap manis.

Step 3Keep stirring and add peanut butter and as much boiling water as needed to make a thick sauce.

Step 4Add salt if desired.
Recipe Notes
For a very quick meal, have some cooked rice with chopped up cucumber and peanut sauce as a vegetarian option and add chicken for the additional extras. The sauce is very suitable for freezing in portions.
