Ingredients

  • 150 g Lurpak* slightly salted butter
  • 6 garlic cloves peeled sliced
  • 3 red chillies shredded
  • 1 kg green prawns
  • 2 tsp lime zest
  • 2 limes juiced
  • 250 g linguine pasta
  • 40 g Lurpak* slightly salted butter
  • 1 pinch salt and pepper
  • 1 handful parmesan grated
  • 1 handful parmesan grated *to serve
  • 1 handful Micro coriander

Method

  • Step 1
    Melt the butter in non stick frying pan over medium heat and cook until just bubbling.
  • Step 2
    Add the garlic and chilli, cook for one minute stirring until fragrant. Add the prawns and toss. Cook for 2-3 minutes or until prawns begin to change colour and are cooked through. Add the lime juice and zest.
  • Step 3
    Meanwhile cook the pasta in a large saucepan of salted boiling water for 10-12 minutes or until aldente. Drain, return to the pan, add the butter, salt and pepper and toss to coat.
  • Step 4
    Add to the prawn mixture and toss.Serve topped with grated parmesan and coriander.
