With the help of Four Pillars Gin, we're sure you're going to love this take on a traditional prawn curry.
Ingredients
- 12 x medium-large green prawns, peeled and deveined
- 3 tsp Four Pillars Gin curry powder
- 3 tbsps olive oil
- 1 small red onion, peeled and finely chopped
- 5 cloves garlic, peeled and finely chopped
- 2 tomatoes, finely chopped
- 8cm ginger, peeled and grated
- 150ml coconut cream
- 1 red chilli, split in two
To finish:
- 1 bunch coriander, leaves chopped
- 2 limes or 1 big lemon, juiced
- salt to taste
Method

Step 1Combine the prawns and the curry powder and set aside for 15-20 minutes.

Step 2In a frying pan add the oil and when hot, fry the prawns for 3-4 minutes. Turn the heat to low and add the onion, garlic, tomatoes, and ginger and cook gently for a good 4-5 minutes until soft.

Step 3Increase the heat and add the coconut cream and chilli and cook until the sauce is dry.

Step 4To finish add the coriander, lemon or lime juice and check seasoning adding salt and lime or lemon juice if needed.

Step 5Serve with white rice, roti, some hot lime pickle on the side and possibly the dal or increase the amount of prawns per person.
