Light, fluffy, healthy scrambled eggs. Quick to make, easy for the kids but sophisticated enough for adults.
Ingredients
- 8 egg
- 3/4 cup water
- 4 English muffins
- 1 salt and pepper
- 1 tbs butter
Method

Step 1Crack eggs into a large mixing bowl and add water.

Step 2Melt butter over medium heat.

Step 3Whisk eggs and water until small bubbles appear on top of liquid.

Step 4Pour eggs into pan and use a spatula to gently push the eggs.

Step 5Toast muffins.

Step 6Eggs are ready when light and fluffy. Put desired amount on each muffin half.

Step 7Serve plain, or with salt and pepper. Garnish with some fresh parsley if desired.
