A cheap and easy way to jazz up the humble sausage.
Ingredients
- 2 tsp olive oil
- 1 brown onion grated
- 6 sausage thin
- 2 zucchini grated
- 1 carrot grated
- 1 cup cheese grated
- 1/2 cup plain flour
- 1 1/2 cup milk
- 3 egg
Method

Step 1Preheat oven to 160C.

Step 2Grease a 4 cm x 18 cm x 25 cm baking dish.

Step 3Heat oil in a frying pan over medium heat.

Step 4Add onion and cook, stirring often, for 2 minutes or until soft. Set aside in a bowl.

Step 5Add sausages to frying pan. Cook, turning for 5-7 minutes or until cooked through.

Step 6Set aside to cool for 5 minutes, then thinly slice.

Step 7Arrange sausages, onion, carrot, zucchini and cheese over base of baking dish.

Step 8Whisk flour and milk in a bowl until smooth. Add eggs. Season with salt and pepper. Whisk to combine and pour over sausages.

Step 9Bake for 50-60 minutes or until set. Stand for 5 minutes before serving.
Recipe Notes
We use a bigger than stated baking dish. This recipe is very delicious and you can add whatever you like. In the past we have added bacon, cauliflower and other vegetables that we had in the fridge. Our kids love it, and it puts a different spin on the old sausage meal.
