Ingredients

  • 2 cups baker's flour
  • 1 tsp salt
  • 2 tsp dry yeast
  • 1 tsp olive oil
  • 1 tbs semolina
  • 1/4 cup lukewarm water

Method

  • Step 1
    Place flour in a large bowl. Add salt and yeast and mix together. Add olive oil.
  • Step 2
    Slowly add lukewarm water to make a firm dough. The mixture should come away easily from the sides of the bowl. Place a lid or plastic wrap over the mixture and place in a warm spot for the mixture to double in size.
  • Step 3
    Turn dough out onto a floured surface and knead for approximately two minutes to expel the air from the dough. If the dough is sticky, add a little more flour.
  • Step 4
    Shape into desired shape, place on a tray lined with baking paper then make two cuts in the top of the bread with scissors.
  • Step 5
    Spray with water and sprinkle with semolina (or seeds of choice). Leave the bread to rise again.
  • Step 6
    Preheat the oven to 185C. Bake bread for approximately 30 minutes until light brown. Remove from oven and cool on rack.
Recipe Notes

For the first rise, I sometimes place the dough in the car if a it's sunny day or the sink with warm water in it.

To make a larger loaf add extra ingredients, this is also suitable for plain flour, wholemeal flour or multigrain flour.

I sometimes add olives and grated cheese to the mixture for a savoury loaf.
