Ingredients

  • 4 chicken breast fillet beaten
  • 1 tbs olive oil
  • 300 ml cream
  • 2 bacon rashers chopped
  • 1 onion sliced
  • 1 clove garlic crushed
  • 1 tsp dijon mustard
  • 1/4 cup chicken stock (liquid)
  • 1 pinch black pepper *to taste
  • 1 tbs parmesan *to taste
  • 1 pinch dried chives

Method

  • Step 1
    Fry chicken breasts in a little olive oil until cooked through. Remove from pan.
  • Step 2
    Add bacon, onion and garlic and sauté.

  • Step 3
    In a small bowl, add cream, mustard and chicken stock and mix together.
  • Step 4
    Add chicken back to pan and stir in cream mixture.
  • Step 5
    Bring to the boil, sprinkle with Parmesan, pepper and chives, then simmer for 5-10 minutes.

  • 1 frying pan
  • 1 bowl
