Quick and easy snack for the kids and kids at heart.
Ingredients
- 85 g Maggi 2 minute noodles
- 110 g canned corn kernels drained
- 2 spring onions chopped
- 2 tbs coriander chopped
- 2 tbs vegetable oil
- 2 eggs
Method

Step 1Cook noodles in boiling water for 2 minutes, drain and place in large mixing bowl.

Step 2Add corn, spring onions and coriander.

Step 3Lightly whisk eggs then add to noodles and stir to combine.

Step 4Heat oil in fry pan.

Step 5Cook large spoonfuls of the mixture for two minutes on each side or until golden brown and crisp.

Step 6Season with salt and pepper, if desired.

- 1 frying pan
Recipe Notes
If cooking in batches, stir mixture each time as egg tends to settle at the bottom of the bowl.
Serve with sweet chilli sauce and sour cream.
