Ingredients

  • 85 g Maggi 2 minute noodles
  • 110 g canned corn kernels drained
  • 2 spring onions chopped
  • 2 tbs coriander chopped
  • 2 tbs vegetable oil
  • 2 eggs

Method

  • Step 1
    Cook noodles in boiling water for 2 minutes, drain and place in large mixing bowl.
  • Step 2
    Add corn, spring onions and coriander.

    Lightly whisk eggs then add to noodles and stir to combine.
  • Step 4
    Heat oil in fry pan.
  • Step 5
    Cook large spoonfuls of the mixture for two minutes on each side or until golden brown and crisp.
  • Step 6
    Season with salt and pepper, if desired.

  • 1 bowl
  • 1 whisk
  • 1 frying pan
Recipe Notes

If cooking in batches, stir mixture each time as egg tends to settle at the bottom of the bowl.

Serve with sweet chilli sauce and sour cream.
