A delicious alternative to basil pesto.
Ingredients
- 2 cup fresh coriander stems intact washed
- 2 cloves garlic chopped fresh
- 1 cup unsalted roasted cashews
- 4 tbs parmesan cheese grated
- 4 tbs olive oil
- 1 lemon juiced
- 1/2 tsp salt and pepper *to taste
Method

Step 1In a food processor, blend all of the ingredients until a thick, dip-like consistency is reached.

Step 2Add more oil or lemon juice if needed.
Recipe Notes
This can be used to add to a pasta dish, or as a dip for crackers. I even like it on toast.
