We have been making this slice since I was a kid. It has always been popular with my family and group of friend's and I hope you all enjoy it too.
Ingredients
- 6 Sanitarium Weet-Bix crushed
- 180 g sugar
- 2 cups plain flour
- 2 tsp baking powder
- 2 tbs cocoa powder
- 250 g butter melted
Peppermint icing
- 1 cup icing sugar
- 3 drops peppermint extract *to taste
- 1/4 cup boiling water
Chocolate icing
- 2 cups icing sugar
- 1 1/2 tbs cocoa powder
- 30 g butter
- 1/4 cup boiling water
Method

Step 1Preheat oven to 180C.

Step 2Sift flour, baking powder and cocoa into a bowl.

Step 3Add Weet-Bix and sugar, lightly mix.

Step 4Add half the melted butter and start to combine, then add remaining butter. If the mixture seems a little dry add a little more butter.

Step 5Line a slice pan with baking paper. Spread mixture evenly into tray and press down firmly.

Step 6Bake for 15 minutes, until soft and spongy.

Step 7While slice is cooking, combine the icing sugar, peppermint essence and boiling water to make a runny icing mixture.

Step 8Remove slice from oven and place on a cooling rack, leave slice in the pan.

Step 9Spread a very thin layer of peppermint icing over the slice, then allow to cool.

Step 10Ice with chocolate icing mixture.

- 1 20cm springform pan
Recipe Notes
You can make your own chocolate icing, this is just the one we always use.
My tin is 30 cm x 25 cm x 3 cm and this mixture is just right, you may need to increase or reduce the mixture depending on your tin size.
