Ingredients

  • 6 Sanitarium Weet-Bix crushed
  • 180 g sugar
  • 2 cups plain flour
  • 2 tsp baking powder
  • 2 tbs cocoa powder
  • 250 g butter melted

Peppermint icing

  • 1 cup icing sugar
  • 3 drops peppermint extract *to taste
  • 1/4 cup boiling water

Chocolate icing

  • 2 cups icing sugar
  • 1 1/2 tbs cocoa powder
  • 30 g butter
  • 1/4 cup boiling water

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Sift flour, baking powder and cocoa into a bowl.
  • Step 3
    Add Weet-Bix and sugar, lightly mix.
  • Step 4
    Add half the melted butter and start to combine, then add remaining butter. If the mixture seems a little dry add a little more butter.
  • Step 5
    Line a slice pan with baking paper. Spread mixture evenly into tray and press down firmly.
  • Step 6
    Bake for 15 minutes, until soft and spongy.
  • Step 7
    While slice is cooking, combine the icing sugar, peppermint essence and boiling water to make a runny icing mixture.
  • Step 8
    Remove slice from oven and place on a cooling rack, leave slice in the pan.
  • Step 9
    Spread a very thin layer of peppermint icing over the slice, then allow to cool.
  • Step 10
    Ice with chocolate icing mixture.

Equipment

  • 1 20cm springform pan
Recipe Notes

You can make your own chocolate icing, this is just the one we always use.

My tin is 30 cm x 25 cm x 3 cm and this mixture is just right, you may need to increase or reduce the mixture depending on your tin size.
