Mexican parcels using tortillas.
Ingredients
- 500 g lean beef mince
- 8 flour tortillas
- 50 g burrito seasoning
- 200 g salsa mild
- 1 brown onion diced
- 1 cup tasty cheese grated
- 1 red capsicum diced
- 125 g canned corn
- 1/4 cup slivered almonds optional
- 2 tbs oil
- 1/4 cup water
Method

Step 1Preheat oven to 180C.

Step 2Heat oil in frypan and brown mince.

Step 3Stir in burrito seasoning mix and ¼ cup of water.

Step 4Add onion or shallots and almonds.

Step 5Add corn and capsicum and simmer for 3-5 minutes.

Step 6Allow to cool and fold through cheese.

Step 7Heat burritos and spoon ⅓ cup of mince in the centre of each burrito.

Step 8Moisten edges of tortilla and fold to create a square/rectangle parcel.

Step 9Brush lightly with oil, place on a lined baking tray and bake for 15-20 minutes.

Step 10Serve topped with mild Mexican salsa and grated cheese.
