Ingredients

  • 500 g lean beef mince
  • 8 flour tortillas
  • 50 g burrito seasoning
  • 200 g salsa mild
  • 1 brown onion diced
  • 1 cup tasty cheese grated
  • 1 red capsicum diced
  • 125 g canned corn
  • 1/4 cup slivered almonds optional
  • 2 tbs oil
  • 1/4 cup water

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Heat oil in frypan and brown mince.
  • Step 3
    Stir in burrito seasoning mix and ¼ cup of water.
  • Step 4
    Add onion or shallots and almonds.
  • Step 5
    Add corn and capsicum and simmer for 3-5 minutes.
  • Step 6
    Allow to cool and fold through cheese.
  • Step 7
    Heat burritos and spoon ⅓ cup of mince in the centre of each burrito.
  • Step 8
    Moisten edges of tortilla and fold to create a square/rectangle parcel.
  • Step 9
    Brush lightly with oil, place on a lined baking tray and bake for 15-20 minutes.
  • Step 10
    Serve topped with mild Mexican salsa and grated cheese.

Also great cold the next day. I use the Old El Paso burrito kits.
