Ingredients

  • 2 tbs oil
  • 1 tbs butter
  • 1 onion diced
  • 1 tbs Indian curry powder
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 cinnamon stick
  • 500 g chicken thighs cubed
  • 2 cup basmati rice
  • 4 cup chicken stock (liquid)
  • 2 tomato diced
  • 1/2 bunch coriander
  • 1 cup cashews *to serve

Method

  • Step 1
    Heat oil and butter in large heavy based saucepan.
  • Step 2
    Add onion and saute until golden.
  • Step 3
    Add curry powder, cumin and cinnamon stick and stir 1-2 minutes until aromatic.
  • Step 4
    Add chicken and cook until sealed.
  • Step 5
    Add rice and stir until spices cover all over the rice. Add chicken stock and turmeric. Stir.
  • Step 6
    Bring to the boil, reduce heat and simmer covered for about 12-15 minutes.
  • Step 7
    Once cooked stir through tomatoes and ½ the coriander.
  • Step 8
    Serve garnished with remaining coriander and cashew nuts.
Recipe Notes
This is great served with plain yoghurt.
