An Indian one pot chicken and rice dish.
Ingredients
- 2 tbs oil
- 1 tbs butter
- 1 onion diced
- 1 tbs Indian curry powder
- 1 tsp ground cumin
- 1 tsp ground turmeric
- 1 cinnamon stick
- 500 g chicken thighs cubed
- 2 cup basmati rice
- 4 cup chicken stock (liquid)
- 2 tomato diced
- 1/2 bunch coriander
- 1 cup cashews *to serve
Method

Step 1Heat oil and butter in large heavy based saucepan.

Step 2Add onion and saute until golden.

Step 3Add curry powder, cumin and cinnamon stick and stir 1-2 minutes until aromatic.

Step 4Add chicken and cook until sealed.

Step 5Add rice and stir until spices cover all over the rice. Add chicken stock and turmeric. Stir.

Step 6Bring to the boil, reduce heat and simmer covered for about 12-15 minutes.

Step 7Once cooked stir through tomatoes and ½ the coriander.

Step 8Serve garnished with remaining coriander and cashew nuts.
