My mother's lovely friend, Elaine, gave me this recipe last weekend, after she made it for us and we went crazy over it!
Ingredients
- 150 g unsalted butter chopped
- 200 g dark chocolate chopped
- 1 1/2 cups self-raising flour
- 1/2 cup brown sugar firmly packed
- 395 g sweetened condensed milk
- 1/2 cup desiccated coconut
- 100 g Mars Rolo chocolate block
- 1/2 cup cocoa powder *to serve
Method

Step 1Grease a 20cm x 30cm lamington pan. Line the base and two long sides with baking paper, extending paper 2 cm over edges of pan for ease of removing.

Step 2Combine butter and chopped chocolate in a pan. Stir over low heat until completely melted.

Step 3Place flour, sugar, condensed milk, coconut and chocolate mixture in a bowl. Mix well.

Step 4Spread the mixture into prepared pan.

Step 5Arrange Rolos over top and press completely into slice mixture. Cook at 180C for 25 minutes, or until lightly browned. Do not overcook. Cool slice in pan before removing.

Step 6Cut into small square and dust with sifted cocoa or icing sugar if you prefer.

- 1 20cm x 30cm lamington pan
Recipe Notes
Can be successfully made with gluten-free flour if required.
Slice can be made up to 4 days ahead.
Store in an airtight container. I store mine in the fridge but it's personal choice.
