Ingredients

  • 30 g butter
  • 2 cup self-raising flour
  • 3/4 cup milk
  • 3 tbs Vegemite
  • 1 cup cheddar cheese grated
  • 1/4 cup cheddar cheese grated *to decorate

Method

  • Step 1
    Preheat oven to 220C degrees or 200C fan-forced.
  • Step 2
    Sift self raising flour into a bowl. Add butter and rub until the mixture has a breadcrumb-like texture. Add the milk and mix gently until the mixture forms a dough.
  • Step 3
    Sprinkle some extra flour over a board.Add the dough and knead until smooth. Roll out the dough to 1cm thick.
  • Step 4
    Spread the vegemite over the dough. Sprinkle over 1 cup of grated cheese.
  • Step 5
    Roll up the dough, starting from one side until you have a long tube. Using a sharp knife, cut the roll into 3cm slices.
  • Step 6
    Place the slices cut side up in a greased round spring-form tin (close to each other is fine). Sprinkle over the remaining 1/4 cup grated cheese.
  • Step 7
    Bake for 20 minutes or until golden and hollow sounding when tapped.
  • Step 8
    Leave on a wire rack to cool and then place into an airtight container for up to 2 days.
