I love the flavour combination of Vegemite and cheese - it's so classically Australian!
Ingredients
- 30 g butter
- 2 cup self-raising flour
- 3/4 cup milk
- 3 tbs Vegemite
- 1 cup cheddar cheese grated
- 1/4 cup cheddar cheese grated *to decorate
Method

Step 1Preheat oven to 220C degrees or 200C fan-forced.

Step 2Sift self raising flour into a bowl. Add butter and rub until the mixture has a breadcrumb-like texture. Add the milk and mix gently until the mixture forms a dough.

Step 3Sprinkle some extra flour over a board.Add the dough and knead until smooth. Roll out the dough to 1cm thick.

Step 4Spread the vegemite over the dough. Sprinkle over 1 cup of grated cheese.

Step 5Roll up the dough, starting from one side until you have a long tube. Using a sharp knife, cut the roll into 3cm slices.

Step 6Place the slices cut side up in a greased round spring-form tin (close to each other is fine). Sprinkle over the remaining 1/4 cup grated cheese.

Step 7Bake for 20 minutes or until golden and hollow sounding when tapped.

Step 8Leave on a wire rack to cool and then place into an airtight container for up to 2 days.
