Serve thick slices of this loaf with a generous spread of your favourite butter.
Ingredients
- 1 cup water
- 1 cup white sugar
- 1 cup sultanas
- 1 medium carrot, grated
- 60 g unsalted butter
- 1 teaspoon cinnamon
- 1 1/2 cups self-raising flour
- 3/4 walnuts, crushed
Method

Step 1Preheat oven to 160C, lightly spray and line an 11 cm x 22 cm loaf tin.

Step 2In a saucepan, combine the water, sugar, sultanas, grated carrot, butter and cinnamon. Heat over low to medium heat.

Step 3Bring to the boil, reduce the heat and simmer, covered, for 10 minutes.

Step 4Remove the saucepan from the heat, allow to stand for 15 minutes.

Step 5Add the flour and crushed walnuts to the saucepan to combine.

Step 6Transfer the mixture to the tin.

Step 7Bake for 50-55 minutes, or until a skewer inserted into the cake comes out clean.

Step 8Turn onto a wire rack to cool. Serve at room temperature.
