Boiled Sultana and Carrot Loaf

Ingredients

  • 1 cup water
  • 1 cup white sugar
  • 1 cup sultanas
  • 1 medium carrot, grated
  • 60 g unsalted butter
  • 1 teaspoon cinnamon
  • 1 1/2 cups self-raising flour
  • 3/4 walnuts, crushed

Method

  • Step 1
    Preheat oven to 160C, lightly spray and line an 11 cm x 22 cm loaf tin.
  • Step 2
    In a saucepan, combine the water, sugar, sultanas, grated carrot, butter and cinnamon. Heat over low to medium heat.
  • Step 3
    Bring to the boil, reduce the heat and simmer, covered, for 10 minutes.
  • Step 4
    Remove the saucepan from the heat, allow to stand for 15 minutes.
  • Step 5
    Add the flour and crushed walnuts to the saucepan to combine.
  • Step 6
    Transfer the mixture to the tin.
  • Step 7
    Bake for 50-55 minutes, or until a skewer inserted into the cake comes out clean.
  • Step 8
    Turn onto a wire rack to cool. Serve at room temperature.
