A tasty change to lasagne, and a yummy dish the whole family can enjoy.
Ingredients
- 1 cooking oil spray
- 750 g beef mince
- 1 tsp crushed garlic
- 1/2 cup corn cob kernels
- 410 g canned crushed tomatoes
- 3 tbs tomato paste
- 1 1/2 cup water
- 1 tsp beef stock (powder)
- 4 sheets tortillas
- 1 cup cheese grated
Method

Step 1Preheat oven to 180C.

Step 2Coat large saucepan with cooking spray and brown mince. When cooked, drain mince and place in a bowl, leaving to one side.

Step 3Add garlic, corn kernels, crushed tomatoes, tomato paste, water and beef stock powder to the saucepan. Bring mixture to boil then simmer for 10 minutes.

Step 4Remove 1 cup of tomato mix and leave to one side.

Step 5Add the mince to remaining tomato mix in the saucepan and bring to the boil.

Step 6Coat a pie plate or round 23 cm oven baking dish with cooking spray.

Step 7Lay 1 tortilla sheet on base and spread 1½ cups of mince sauce over sheet.

Step 8Repeat until last tortilla in on the top. Cover with reserved tomato mix and sprinkle cheese on top.

Step 9Bake for 20 minutes or until cheese has browned.
Recipe Notes
You can also add 1 capsicum to this dish for extra taste, or 1 x 35 g of taco seasoning mix to give it a bit of zest.
