This recipe is delicious, and can be made as 6 large muffins or 12 mini muffins. If you desire you could double the recipe and freeze some muffins!
Ingredients
- 1 cup self-raising flour
- 1/3 cup caster sugar
- 1/2 tsp ground cinnamon
- 1 egg
- 40 g butter
- 1/4 cup milk
- 1/3 cup banana mashed
- 1 tbs sultanas
- 12 dried banana
- 1/3 cup desiccated coconut
Method

Step 1Preheat oven to 180-200C.

Step 2Grease a 6 hole muffin pan or 12 hole mini muffin pan.

Step 3Sift flour into a medium bowl, add sugar, cinnamon, coconut, eggs, butter and milk.

Step 4Add mashed banana and sultanas, stir until just combined.

Step 5Divide mixture in holes, place a dried banana chip on top and bake for 12-15 minutes.
Equipment
- 1 6-hole muffin pan
Recipe Notes
Check the muffins after 12 minutes, remember that they will continue to cook on standing.
