This recipe is delicious, and can be made as 6 large muffins or 12 mini muffins. If you desire you could double the recipe and freeze some muffins! - maree2783

Ingredients

  • 1 cup self-raising flour
  • 1/3 cup caster sugar
  • 1/2 tsp ground cinnamon
  • 1 egg
  • 40 g butter
  • 1/4 cup milk
  • 1/3 cup banana mashed
  • 1 tbs sultanas
  • 12 dried banana
  • 1/3 cup desiccated coconut

Method

  • Step 1
    Preheat oven to 180-200C.
  • Step 2
    Grease a 6 hole muffin pan or 12 hole mini muffin pan.
  • Step 3
    Sift flour into a medium bowl, add sugar, cinnamon, coconut, eggs, butter and milk.

  • Step 4
    Add mashed banana and sultanas, stir until just combined.
  • Step 5
    Divide mixture in holes, place a dried banana chip on top and bake for 12-15 minutes.

Equipment

  • 1 6-hole muffin pan
Recipe Notes

Check the muffins after 12 minutes, remember that they will continue to cook on standing.
