Banana and coconut work really well together to make a sweet, moist loaf that both adults and kids will love.
Ingredients
- 1 1/2 cup self-raising flour
- 1 cup desiccated coconut
- 1 cup sugar
- 1 cup banana mashed
- 1 cup coconut milk
- 1 egg
- 1 tsp vanilla essence
Method

Step 1Preheat oven to 160C. Grease and/or line a 10 cm x 20 cm loaf pan.

Step 2Sift flour and mix dry ingredients together in a bowl.

Step 3In another bowl mix wet ingredients together then pour the wet ingredients into the dry ingredients. Mix until just combined.

Step 4Pour into prepared loaf tin and bake at 160C for 55-60 minutes or until a skewer comes out clean.
