Ingredients

  • 1 1/2 cup self-raising flour
  • 1 cup desiccated coconut
  • 1 cup sugar
  • 1 cup banana mashed
  • 1 cup coconut milk
  • 1 egg
  • 1 tsp vanilla essence

Method

  • Step 1
    Preheat oven to 160C. Grease and/or line a 10 cm x 20 cm loaf pan.
  • Step 2
    Sift flour and mix dry ingredients together in a bowl.
  • Step 3
    In another bowl mix wet ingredients together then pour the wet ingredients into the dry ingredients. Mix until just combined.

  • Step 4
    Pour into prepared loaf tin and bake at 160C for 55-60 minutes or until a skewer comes out clean.
