Ingredients

  • 4 tomato ripe
  • 1 tbs extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 1 1/2 tsp brown sugar
  • 2 garlic clove crushed
  • 1/2 tsp dried oregano

Method

  • Step 1
    Preheat oven to 220C.
  • Step 2
    Halve tomatoes length wise and arrange cut side up in a medium sized baking dish.

  • Step 3
    Spread each tomato half with a little garlic and sprinkle with a little brown sugar.
  • Step 4
    Whisk together oil and vinegar and pour evenly over the tomatoes.
  • Step 5
    Sprinkle oregano over the top.
  • Step 6
    Roast for about 30 minutes or until tomatoes are tender and sauce has caramelised slightly.
Recipe Notes

I use Roma tomatoes. Make sure you get to the dishes quickly - this sauce cools and becomes quite sticky!
