Fill the house with the rich aroma of these tasty tomatoes to dress up a boring old meat and veg dinner.
Ingredients
- 4 tomato ripe
- 1 tbs extra virgin olive oil
- 1/4 cup balsamic vinegar
- 1 1/2 tsp brown sugar
- 2 garlic clove crushed
- 1/2 tsp dried oregano
Method

Step 1Preheat oven to 220C.

Step 2Halve tomatoes length wise and arrange cut side up in a medium sized baking dish.

Step 3Spread each tomato half with a little garlic and sprinkle with a little brown sugar.

Step 4Whisk together oil and vinegar and pour evenly over the tomatoes.

Step 5Sprinkle oregano over the top.

Step 6Roast for about 30 minutes or until tomatoes are tender and sauce has caramelised slightly.
Recipe Notes
I use Roma tomatoes. Make sure you get to the dishes quickly - this sauce cools and becomes quite sticky!
