Delicious and easy.
Ingredients
- 1 packet buttercake cake mix
- 120 g butter
- 425 g no-added-sugar canned apricot
- 250 ml sour cream
- 1 tbs cinnamon sugar
Method

Step 1Preheat oven to 180C.

Step 2Rub butter into cake mix until crumbly.

Step 3Press mixture into a greased slice tray and bake in oven until golden. Remove and allow to cool.

Step 4Spread apricot evenly over base and then spread sour cream over the apricot.

Step 5Sprinkle cinnamon sugar evenly over the sour cream and then bake for a further 15 minutes or until the sugar starts to brown.
Recipe Notes
I use SPC Baker's Apricot. You can also substitute apricot for apple if you prefer (SPC make a Baker's Apple also). No need to wait for the base to cool - made it in a hurry the other day and just slapped it together - worked a treat!
