Apricot and sour cream slice

Ingredients

  • 1 packet buttercake cake mix
  • 120 g butter
  • 425 g no-added-sugar canned apricot
  • 250 ml sour cream
  • 1 tbs cinnamon sugar

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Rub butter into cake mix until crumbly.
  • Step 3
    Press mixture into a greased slice tray and bake in oven until golden. Remove and allow to cool.
  • Step 4
    Spread apricot evenly over base and then spread sour cream over the apricot.
  • Step 5
    Sprinkle cinnamon sugar evenly over the sour cream and then bake for a further 15 minutes or until the sugar starts to brown.
Recipe Notes

I use SPC Baker's Apricot. You can also substitute apricot for apple if you prefer (SPC make a Baker's Apple also). No need to wait for the base to cool - made it in a hurry the other day and just slapped it together - worked a treat!
