Spicy Thai-inspired pork burgers.
Ingredients
- 500 g pork mince
- 125 g raw peanuts
- 2 cup fresh breadcrumbs
- 8 spring onion
- 2 red chilli
- 1 lime juiced zested
- 2 garlic clove
- 1 egg
- 1 bunch coriander
- 1 tbs oil
Method

Step 1In a food processor, chop the onions, chillies, nuts, garlic and coriander.

Step 2Mix together the pork, egg, breadcrumbs and chopped vegetables by hand until well combined.

Step 3Using wet hands, form 4 patties.

Step 4Chill in the fridge for at least 30 minutes.

Step 5Brush with a little oil then grill, fry or barbeque for 5-10 minutes each side until cooked through.

Step 6Serve in burger buns with onion slices, crisp cos lettuce and sweet chilli sauce.

Recipe Notes
I sometimes make the mixture into small meat balls which I brown in the pan and then cook in the oven at 200C for 15 minutes. Serve with sweet chilli dipping sauce as a nice appetiser when entertaining.
