Ingredients

  • 500 g pork mince
  • 125 g raw peanuts
  • 2 cup fresh breadcrumbs
  • 8 spring onion
  • 2 red chilli
  • 1 lime juiced zested
  • 2 garlic clove
  • 1 egg
  • 1 bunch coriander
  • 1 tbs oil

Method

  • Step 1
    In a food processor, chop the onions, chillies, nuts, garlic and coriander.
  • Step 2
    Mix together the pork, egg, breadcrumbs and chopped vegetables by hand until well combined.
  • Step 3
    Using wet hands, form 4 patties.
  • Step 4
    Chill in the fridge for at least 30 minutes.
  • Step 5
    Brush with a little oil then grill, fry or barbeque for 5-10 minutes each side until cooked through.
  • Step 6
    Serve in burger buns with onion slices, crisp cos lettuce and sweet chilli sauce.

Recipe Notes
I sometimes make the mixture into small meat balls which I brown in the pan and then cook in the oven at 200C for 15 minutes. Serve with sweet chilli dipping sauce as a nice appetiser when entertaining.
