Ingredients

  • 1 3/4 cups self-raising flour
  • 1/2 cup caster sugar
  • 1 cup natural yoghurt
  • 1 egg
  • 0.6 cup vegetable oil
  • 1 cup banana mashed optional
  • 1 drop liquid food colouring optional

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Lightly grease a 12-hole or a mini muffin pan.
  • Step 3
    Sift flour and sugar into a bowl.

    Combine yoghurt, egg, oil and mashed banana in a large bowl.
  • Step 5
    Gradually add dry ingredients, stirring until just combined.
  • Step 6
    Spoon mixture into muffin pan.
  • Step 7
    Bake for 20-25 minutes or until a skewer inserted into the centre comes out clean.
  • Step 8
    Stand muffins in pan for 5 minutes.
  • Step 9
    Turn onto a wire rack to cool completely. Serve warm or cold.

Equipment

  • 1 12-hole muffin pan
Recipe Notes

Honey may be added as a sweetener.

I have swapped the banana for strawberries, mango, apples, choc chips on occasions, and it works well.

I have also used food colouring to make them blue, green, pink, yellow muffins so they are eating healthy and it's now fun for them.

Yoghurt can be natural or flavoured.
