A healthy and delicious muffin for the lunchbox or with a cuppa.
Ingredients
- 1 3/4 cups self-raising flour
- 1/2 cup caster sugar
- 1 cup natural yoghurt
- 1 egg
- 0.6 cup vegetable oil
- 1 cup banana mashed optional
- 1 drop liquid food colouring optional
Method

Step 1Preheat oven to 180C.

Step 2Lightly grease a 12-hole or a mini muffin pan.

Step 3Sift flour and sugar into a bowl.

Step 4Combine yoghurt, egg, oil and mashed banana in a large bowl.

Step 5Gradually add dry ingredients, stirring until just combined.

Step 6Spoon mixture into muffin pan.

Step 7Bake for 20-25 minutes or until a skewer inserted into the centre comes out clean.

Step 8Stand muffins in pan for 5 minutes.

Step 9Turn onto a wire rack to cool completely. Serve warm or cold.

Recipe Notes
Honey may be added as a sweetener.
I have swapped the banana for strawberries, mango, apples, choc chips on occasions, and it works well.
I have also used food colouring to make them blue, green, pink, yellow muffins so they are eating healthy and it's now fun for them.
Yoghurt can be natural or flavoured.
