Ingredients

  • 1 L milk
  • 2 tbs plain yoghurt

Method

  • Step 1
    Bring milk to boil. Turn down heat when it rises up and simmer for 2 minutes.
  • Step 2
    Leave to cool to around 43C.
  • Step 3
    Skim off skin and beat the 2 tablespoons of yoghurt with a little of the warm milk.
  • Step 4
    Beat in rest of the milk.
  • Step 5
    Pour into 1 x 1 litre or 2 x 500 mL wide mouth thermos. Screw on lid .
  • Step 6
    Wrap in towel and leave to set overnight.
  • Step 7
    Place in fridge in morning and it will be ready to use after 8 hours.
Recipe Notes

Sheep and goats milk make excellent thick yoghurt using this method. I also use skim milk.

If you don't have a thermometer to measure temperature of milk, it is the right temperature when you can manage to hold your index finger in for 10 seconds!

Makes 1 litre.
