We might live in a sunburnt country, but this doesn’t mean we can’t enjoy a white Christmas. In fact, I can’t imagine a Christmas without it! Sweet bites of this crunchy no-bake slice jam-packed with rice bubbles and dried and jewel-like fruits is something I automatically associate with the festive season. What's more, this classic Aussie-invented recipe is trending right now and it only takes 20 minutes to make.

How to make white Christmas: key tips

It only takes 4 easy steps to make this white Christmas, and you don’t need the oven at all, which is great during our hot summer days. You begin by lining your lamington pan with baking paper to help with easy removal of the slice. Next, you melt the copha and place it in a bowl with all the other ingredients. Mix well to combine and distribute all the fruit, but be a bit careful not to crush those rice bubbles, so you get to enjoy their wonderful crunch later. Use your hands to press the mixture into the prepared pan, making sure the surface is even. Pop the pan into the fridge for around 4 hours or until the slice is nice and firm. When you’re ready to serve, lift the white Christmas slab out of the pan and use a sharp knife to cut it into squares.

The twinkling stars of this white Christmas are classic: puffy rice bubbles give this slice its light-as-air crunch, and the fruits – in the form of juicy sultanas, red and green glacé cherries, glacé apricots and pineapple – offer plenty of colour and sweet pops of flavour. Melted copha (solidified coconut oil) is combined with milk powder to make a creamy shortening that holds all these ingredients together, which also includes desiccated coconut, because you definitely can’t dream of a white Christmas without the snow!

Ingredients

  • 250 g copha
  • 3 cups Kellogg's Rice Bubbles
  • 1 cup coconut
  • 3/4 cup icing sugar
  • 1 cup Woolworths Full Cream Milk Powder
  • 30 g glace cherries red and green
  • 1/2 cup sultanas
  • 30 g glace apricots
  • 30 g glace pineapple

Method

  • Step 1
    Line a 28cm x 18cm lamington pan with baking paper.
  • Step 2
    Melt copha. Add to all other ingredients combined in a large bowl and mix thoroughly.

How long can you keep white Christmas? 

Store leftover white Christmas in an airtight container in the fridge for up to a week. If you want to get ahead with your Christmas cooking, white Christmas freezes well. Place the airtight container in the freezer for up to 2 months.

Can I decorate this white Christmas?

Sure! This slice is pretty sweet and so you don’t need a lot of decoration on top. A simple drizzle of white chocolate works well and looks festive, too. You could also push some green and red M&M’s Minis into the top of the slice before you refrigerate it.
