A tasty, healthy lentil burger that's a great source of protein for vegetarians. Suitable for the BBQ.
Ingredients
- 2 cups brown lentils cooked
- 2 potatoes cooked medium
- 1/2 cup breadcrumbs
- 1/4 cup sesame seeds
- 1/4 cup sunflower seeds
- 1/2 cup almonds finely chopped
- 1 onion finely chopped
- 2 eggs
- 1 tsp mixed herbs
- 1 tsp seasoning
- 1/2 tsp salt
- 2 tbs oil for frying
Method

Step 1Mash potatoes and mix in the cooked, drained lentils.

Step 2Add breadcrumbs, seeds, nuts and chopped onion.

Step 3Add herbs, seasonings and eggs and form into burgers.

Step 4Coat a fry pan with oil and shallow fry until brown on both sides.
Recipe Notes
This recipe also makes a great vegetarian filling for cannelloni.
Seeds and nuts may be substituted by other ingredients such as cooked rice, rolled oats or grated carrot.
