Healthy alternative to the meat curries and suitable for vegetarians
Ingredients
- 1 tbs oil
- 1/2 cup mixed nuts
- 1 onion chopped medium
- 2 cm ginger grated
- 1 garlic clove crushed
- 1 tsp curry powder *to taste
- 1 potato diced medium
- 1 carrot diced
- 1 cup cauliflower broken into florets
- 1 cup broccoli broken into florets
- 1 zucchini chopped medium
- 1 cup canned mixed beans chopped
Method

Step 1Heat oil in large pan. Add nuts and toss over medium heat for approximately 2 minutes and then remove from pan.

Step 2Add onion, ginger and garlic to pan. Cook until onion is transparent.

Step 3Add curry powder and cook for 2 minutes over low heat. Stir continuously.

Step 4Add potato, carrot and cauliflower. Cover pan with a lid and cook for 2-3 minutes.

Step 5Add remaining vegetables. Stir well and cook for further 2-3 minutes.

Step 6Return nuts to pan.

Step 7Combine well and serve.
Recipe Notes
Some water may be needed, approximately 1/4 cup to prevent sticking. Serves 4 as a vegetarian meal or 8 as a vegetable dish with meat. Adjust curry powder according to your taste - I use Keen's traditional curry.
