I've only recently became vegan and I'm experimenting with yummy vegan ingredients! Very simple and healthy.
Ingredients
- 1 L water
- 2 vegetable stock cubes
- 1 cup chopped mushrooms
- 1/2 cup grated or cubed carrot
- 1/2 cup grated or cubed pumpkin
- 1/2 cup chopped bok choy
- 1/2 cup grated zucchini
- 1 cup cubed soft or extra soft tofu
- Pinch of garlic powder
- Pinch of ginger powder
- Salt and pepper, to taste
Method

Step 1Place stock cubes in water and bring to a boil, add mushrooms, allow to simmer for few minutes.

Step 2Add all vegetables, cook until soft.

Step 3Add tofu and all spices, simmer for another few minutes.
Recipe Notes
You can garnish this with fresh parsley and I love to eat it with vegan soda bread.
