Ingredients

  • 1 L water
  • 2 vegetable stock cubes
  • 1 cup chopped mushrooms
  • 1/2 cup grated or cubed carrot
  • 1/2 cup grated or cubed pumpkin
  • 1/2 cup chopped bok choy
  • 1/2 cup grated zucchini
  • 1 cup cubed soft or extra soft tofu
  • Pinch of garlic powder
  • Pinch of ginger powder
  • Salt and pepper, to taste

Method

  • Step 1
    Place stock cubes in water and bring to a boil, add mushrooms, allow to simmer for few minutes.
  • Step 2
    Add all vegetables, cook until soft.
  • Step 3
    Add tofu and all spices, simmer for another few minutes.
Recipe Notes
You can garnish this with fresh parsley and I love to eat it with vegan soda bread.
