Ingredients

  • 2 bananas ripe
  • 1/4 cup vegetable oil
  • 1 cup sugar
  • 1 tsp bicarbonate of soda
  • 2 cups self-raising flour
  • 1 cup fresh blueberries
  • 1/3 cup soy milk

Method

  • Step 1
    Preheat oven to 200C.
  • Step 2
    In a small bowl mash the bananas with oil and sugar, combine well.
  • Step 3
    In a medium sized bowl, sift together bicarbonate of soda and flour.
  • Step 4
    Make a well and add the banana mixture to dry ingredients, folding it in until combined.
  • Step 5
    Add the soy milk.
  • Step 6
    Gently fold in blueberries, until combined evenly.
  • Step 7
    Spoon mixture into muffin trays and bake for 15-20 minutes.
