Deliciously sweet and moist, especially in the middle. These are very tasty vegan muffins!
Ingredients
- 2 bananas ripe
- 1/4 cup vegetable oil
- 1 cup sugar
- 1 tsp bicarbonate of soda
- 2 cups self-raising flour
- 1 cup fresh blueberries
- 1/3 cup soy milk
Method

Step 1Preheat oven to 200C.

Step 2In a small bowl mash the bananas with oil and sugar, combine well.

Step 3In a medium sized bowl, sift together bicarbonate of soda and flour.

Step 4Make a well and add the banana mixture to dry ingredients, folding it in until combined.

Step 5Add the soy milk.

Step 6Gently fold in blueberries, until combined evenly.

Step 7Spoon mixture into muffin trays and bake for 15-20 minutes.
