Udon Noodles with Cauliflower, Green Beans and Cashews

Ingredients

  • 1/2 cauliflower small
  • 20 green beans
  • 1 tbs ginger grated
  • 1 tbs garlic grated
  • 1 pak choy sliced
  • 1 carrot sliced
  • 3/4 cup cashews raw
  • 1 tsp ground ginger
  • 1 tsp sweet paprika
  • 1 tsp ground coriander
  • 1 tsp lemongrass paste
  • 1 tbs sesame oil
  • 1 drop soy sauce
  • 50 ml sunflower oil
  • 1 packet udon noodles cooked
  • 1 red chilli sliced

Method

  • Step 1
    Start to separate the cauliflower and marinate with the ground ginger powder, paprika powder and ground coriander. Give it a little splash of oil to help mix it through. When ready let it rest for 15 minutes.
  • Step 2
    Heat some sunflower oil in your wok and start to fry the fresh grated ginger and garlic for 20 seconds.
  • Step 3
    Add the marinated cauliflower and cashews and fry for 3-5 min.
  • Step 4
    Add the green beans and sliced carrot. Fry for further 2 min.
  • Step 5
    Make some space in the middle of the woc and add your Udon Noodles. Stir well to combine and add the sesame oil and soy sauce.
  • Step 6
    Finish with the sliced chilli and pak choy. Fry for 2 more min and turn off the heat. Serve.
