A quick and easy Japanese dish with veggies and nuts.
Ingredients
- 1/2 cauliflower small
- 20 green beans
- 1 tbs ginger grated
- 1 tbs garlic grated
- 1 pak choy sliced
- 1 carrot sliced
- 3/4 cup cashews raw
- 1 tsp ground ginger
- 1 tsp sweet paprika
- 1 tsp ground coriander
- 1 tsp lemongrass paste
- 1 tbs sesame oil
- 1 drop soy sauce
- 50 ml sunflower oil
- 1 packet udon noodles cooked
- 1 red chilli sliced
Method

Step 1Start to separate the cauliflower and marinate with the ground ginger powder, paprika powder and ground coriander. Give it a little splash of oil to help mix it through. When ready let it rest for 15 minutes.

Step 2Heat some sunflower oil in your wok and start to fry the fresh grated ginger and garlic for 20 seconds.

Step 3Add the marinated cauliflower and cashews and fry for 3-5 min.

Step 4Add the green beans and sliced carrot. Fry for further 2 min.

Step 5Make some space in the middle of the woc and add your Udon Noodles. Stir well to combine and add the sesame oil and soy sauce.

Step 6Finish with the sliced chilli and pak choy. Fry for 2 more min and turn off the heat. Serve.
