Tropical Coconut Meringue Torte, brought to you by Woolworths Christmas.
Ingredients
- 125 g White Wings Pavlova Magic Dessert Mix
- 1/2 cup Home Brand desiccated coconut
- 600 ml thickened cream
- 2 mango sliced cheeks removed
- 4 passionfruit halved pulp removed
- 125 g fresh raspberries
- 1 tbs mint *to decorate
- 1 tbs shredded coconut toasted *to decorate
Method

Step 1Preheat oven to 170C.

Step 2Line 3 baking trays with non-stick baking paper. Draw a 20 cm disc on each piece of paper.

Step 3Prepare pavlova mix and fold in coconut.

Step 4Spoon meringue mixture evenly among the prepared discs and smooth the surfaces.

Step 5Bake, swapping the trays halfway through cooking, for 40 minutes or until the meringues are crisp and dry.

Step 6Turn oven off. Leave meringues in oven, with door ajar, to cool completely.

Step 7Place 1 meringue disc on a cake stand. Top with ⅓ of the cream and fruit, leaving a 2 cm border.

Step 8Repeat with remaining meringue, cream and fruit.

Step 9Garnish torte with mint and coconut.
