My mother-in-law used to always make this for us, it's my favourite meatloaf.
Ingredients
- 1kg beef mince
- 2 baby onion diced
- 2 tsp curry powder
- 1 tsp parsley chopped
- 1/2 cup milk
- 1 cup dried breadcrumbs
- 1 cup water
Sauce
- 1/2 cup water
- 1/4 cup Worcestershire sauce
- 1/2 cup tomato sauce
- 2 tsp white vinegar
- 1/2 cup brown sugar
- 30g butter
- 1 tsp coffee powder
- 2 tsp lemon juice
Method

Step 1Preheat oven to 180C and grease a loaf pan.

Step 2In a large bowl, mix together mince, onions, curry powder, parsley, milk, breadcrumbs and water.

Step 3Bake for 30 minutes, drain out oil and turn over.

Step 4Sauce: Place all sauce ingredients in a saucepan and bring to the boil for 5 minutes.

Step 5Pour over meatloaf and cook for a further 45 minutes.
