Let the oven do all the work in this effortless tray-baked pork sausages and roast veg recipe.
Ingredients
- 500 g pork sausage
- 2 fennel bulbs thickly sliced trimmed
- 2 red onions cut into wedges
- 2 baby roma truss tomatoes quartered
- 1 red capsicums deseeded cut into chunks
- 500 g potato cut into wedges skin on
- 2 tbs olive oil
- 2 tbs lemon juice
- 3 garlic cloves crushed
Method

Step 1Preheat oven to 180C or 160C fan-force.

Step 2Place sausages and vegetables on a large roasting tray.

Step 3Combine oil, juice and garlic in a bowl. Season. Pour over tray and toss to coat.

Step 4Roast for 1 hour, turning sausages halfway through.
Recipe Notes
Use pork and sage sausages for the best result.
If you haven’t got a large enough roasting tray, use 2 smaller trays. Vegetables will not brown if they are piled up.
