Ingredients

  • 500 g pork sausage
  • 2 fennel bulbs thickly sliced trimmed
  • 2 red onions cut into wedges
  • 2 baby roma truss tomatoes quartered
  • 1 red capsicums deseeded cut into chunks
  • 500 g potato cut into wedges skin on
  • 2 tbs olive oil
  • 2 tbs lemon juice
  • 3 garlic cloves crushed

Method

  • Step 1
    Preheat oven to 180C or 160C fan-force.
  • Step 2
    Place sausages and vegetables on a large roasting tray.
  • Step 3
    Combine oil, juice and garlic in a bowl. Season. Pour over tray and toss to coat.

    Roast for 1 hour, turning sausages halfway through.
Recipe Notes

Use pork and sage sausages for the best result.

If you haven’t got a large enough roasting tray, use 2 smaller trays. Vegetables will not brown if they are piled up.
