Ingredients

  • 10 kg tomato chopped ripe
  • 1 kg onion chopped
  • 60 g garlic clove flattened peeled
  • 2 kg sugar
  • 30 g allspice
  • 500 g salt
  • 30 g fresh ginger sliced
  • 7 g cayenne pepper
  • 30 g ground cloves
  • 5 cup brown vinegar

Method

  • Step 1
    Boil unpeeled tomatoes, onion and garlic slowly for 3 hours.
  • Step 2
    When cooled, use a blender or bamix to puree. Add sugar and salt.
  • Step 3
    Make a spice bag using a piece of muslin or permeable fabric and place cayenne, ginger, cloves and allspice inside and secure firmly. Place in pot with sauce mix and add vinegar.
  • Step 4
    Boil gently for 2 hours, stirring occasionally, taking care not to burn the bottom of the pot. Leave to cool.
  • Step 5
    Remove spice bag. Bottle in sterilised bottles and seal firmly.
Recipe Notes
This recipe keeps very well in a cupboard for many months.
