Handed down from generation to generation this is a family favourite that keeps well.
Ingredients
- 10 kg tomato chopped ripe
- 1 kg onion chopped
- 60 g garlic clove flattened peeled
- 2 kg sugar
- 30 g allspice
- 500 g salt
- 30 g fresh ginger sliced
- 7 g cayenne pepper
- 30 g ground cloves
- 5 cup brown vinegar
Method

Step 1Boil unpeeled tomatoes, onion and garlic slowly for 3 hours.

Step 2When cooled, use a blender or bamix to puree. Add sugar and salt.

Step 3Make a spice bag using a piece of muslin or permeable fabric and place cayenne, ginger, cloves and allspice inside and secure firmly. Place in pot with sauce mix and add vinegar.

Step 4Boil gently for 2 hours, stirring occasionally, taking care not to burn the bottom of the pot. Leave to cool.

Step 5Remove spice bag. Bottle in sterilised bottles and seal firmly.

This recipe keeps very well in a cupboard for many months.
