This is a quick and simple meal that tastes great and my wife and 5 kids love it. It can be prepared in advance and takes 5 minutes to assemble and heat through.
Ingredients
- 2 tbs tomato pesto
- 1 barbecued cooked chicken shredded
- 2 tbs fresh basil finely chopped
- 600 ml cream fresh *to taste
- 750 g spaghetti *to taste
- 80 g toasted pine nuts
Method

Step 1Boil a large pot of water and cook spaghetti until al dente. Drain then rinse with cold running water to prevent spaghetti from binding up on itself. Set aside in a large bowl.

Step 2In a large frying pan, add the tomato pesto and begin to fry off so that the aromas are released, then add the cream and stir until combined.

Step 3Add the cooked spaghetti, chicken, toasted pine nuts and basil.

Step 4Stir until all ingredients are coated in the pesto cream mix and heated through.

Step 5Serve with crusty bread.
