Tomato, Pesto and Chicken Spaghetti

This is a quick and simple meal that tastes great and my wife and 5 kids love it. It can be prepared in advance and takes 5 minutes to assemble and heat through. - jesse.68

Ingredients

  • 2 tbs tomato pesto
  • 1 barbecued cooked chicken shredded
  • 2 tbs fresh basil finely chopped
  • 600 ml cream fresh *to taste
  • 750 g spaghetti *to taste
  • 80 g toasted pine nuts

Method

  • Step 1
    Boil a large pot of water and cook spaghetti until al dente. Drain then rinse with cold running water to prevent spaghetti from binding up on itself. Set aside in a large bowl.
  • Step 2
    In a large frying pan, add the tomato pesto and begin to fry off so that the aromas are released, then add the cream and stir until combined.
  • Step 3
    Add the cooked spaghetti, chicken, toasted pine nuts and basil.
  • Step 4
    Stir until all ingredients are coated in the pesto cream mix and heated through.
  • Step 5
    Serve with crusty bread.
