Ingredients

  • 500 g chicken mince
  • 1 spring onion chopped
  • 1/2 tbs soy sauce
  • 1/2 tbs sesame oil
  • 1/2 tbs rice wine
  • 1 tbs cornflour
  • 1 tsp ginger grated
  • 1 L Campbell's Real Thai Soup Base
  • 100 g vermicelli noodles
  • 1/4 carrot sliced
  • 1/4 onion sliced
  • 1/4 bunch coriander

Method

  • Step 1
    In a medium bowl, combine mince, soy sauce, sesame oil, rice wine, spring onion, ginger and corn flour, then mix well.
  • Step 2
    In a medium saucepan, boil the water and cook the noodles until soft. Drain.
  • Step 3
    In another saucepan, heat the Thai soup base and vegetables. Roll the mince mixture into small balls, and then drop into the soup to cook.
  • Step 4
    Then add the noodles into the soup and simmer until cooked.
Recipe Notes
I use half the mince mixture at a time. The other half of the mince I roll into balls, drop into boiling water, then drain and freeze for another time.
