Quick, easy and tasty!
Ingredients
- 500 g chicken mince
- 1/2 broccoli chopped
- 1 red capsicum sliced
- 1/2 cup cashews
- 1 bunch coriander optional
- 1 tsp garlic minced
- 1 tsp ginger
- 1 tbs lemon juice
- 1 tbs lime juice
- 2 tbs oyster sauce
- 2 tbs kecap manis
- 2 cups Massel* Chicken Style Liquid Stock
- 3 tbs brown sugar
- 1 tbs sesame oil

Method

Step 1Heat sesame oil in a wok and add chicken mince, garlic and ginger. Cook roughly 3-5 minutes.

Step 2Add broccoli and red capsicum to chicken, and stir together until combined.

Step 3Add chicken stock until it almost covers the chicken mixture.

Step 4Add kecap manis and oyster sauce, and stir.

Step 5Add lemon and lime juice, and stir.

Step 6Add brown sugar and simmer for 15-20 minutes.

Step 7Just before serving, add cashews and coriander. Simmer for 2 minutes.

Step 8Serve on a bed of jasmine rice.

Recipe Notes
This recipe is very much 'to taste'. I have tried to give measurements, but it is entirely up to you how much garlic, ginger, juice, and sauce you add. Have fun experimenting!
