Ingredients

  • 500 g chicken mince
  • 1/2 broccoli chopped
  • 1 red capsicum sliced
  • 1/2 cup cashews
  • 1 bunch coriander optional
  • 1 tsp garlic minced
  • 1 tsp ginger
  • 1 tbs lemon juice
  • 1 tbs lime juice
  • 2 tbs oyster sauce
  • 2 tbs kecap manis
  • 2 cups Massel* Chicken Style Liquid Stock
  • 3 tbs brown sugar
  • 1 tbs sesame oil

Method

  • Step 1
    Heat sesame oil in a wok and add chicken mince, garlic and ginger. Cook roughly 3-5 minutes.
  • Step 2
    Add broccoli and red capsicum to chicken, and stir together until combined.
  • Step 3
    Add chicken stock until it almost covers the chicken mixture.
  • Step 4
    Add kecap manis and oyster sauce, and stir.
  • Step 5
    Add lemon and lime juice, and stir.
  • Step 6
    Add brown sugar and simmer for 15-20 minutes.
  • Step 7
    Just before serving, add cashews and coriander. Simmer for 2 minutes.
  • Step 8
    Serve on a bed of jasmine rice.

This recipe is very much 'to taste'. I have tried to give measurements, but it is entirely up to you how much garlic, ginger, juice, and sauce you add. Have fun experimenting!
